So the "I hate my girlfriend final boss" is the boyfriend who stereotypically does all the actions that prove he doesn't like his girlfriend. Constantly making fun of her, never spending time with her, manipulating, gaslighting, all those things.
It's used in a humorous sense to poke fun at archetypes or caricatures of people.
